Method
 

Directions
  1. In a large mixing bowl, combine 1 cup of all-purpose flour, 2 tablespoons of granulated sugar, 3/4 cup of cornmeal, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Use a whisk to blend evenly.
  2. Gradually pour in 3/4 cup of milk into the dry mixture while stirring. Mix until a smooth, thick batter forms.
  3. Finely chop 1 cup of onions and fold gently into the batter.
  4. In a large skillet, heat about 1/4 inch of oil over medium heat. Test oil with a bit of batter.
  5. Drop spoonfuls of batter into hot oil, flatten slightly, and fry for 2-3 minutes on each side until golden brown.
  6. Remove fritters using a slotted spoon and drain on paper towels. Serve warm with ranch dressing, sour cream, or spicy aioli.
