- Carefully cut the top shell of each lobster tail lengthwise and lift the meat to rest on top of the shell.
- Melt 4 tablespoons of unsalted butter in a small saucepan, then add minced garlic, parsley, chives, lemon juice, salt, and pepper. Brush half over the lobster tails.
- Place the lobster tails in the oven and bake for 12-15 minutes until the meat is opaque and firm.
- Boil peeled potatoes in salted water for about 15 minutes until fork-tender. Drain and return to pot to steam.
- Mash the drained potatoes, gradually adding milk and sour cream. Season with salt and pepper to taste.
- Drizzle remaining garlic herb butter over baked lobster tails and serve alongside creamy mashed potatoes.
