- In a large skillet, heat over medium-high heat and add ground beef. Cook for about 7-10 minutes until browned.
- Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente, about 8-10 minutes.
- In a large mixing bowl, combine cooked pasta, ground beef, cheddar cheese, tomatoes, pickles, and red onions. Toss gently.
- In a separate bowl, whisk together mayonnaise, sweet relish, mustard, vinegar, paprika, and onion powder until smooth.
- Pour the dressing over the pasta mixture and fold everything together, adjusting seasoning as needed.
- When ready to serve, top with shredded lettuce and additional cheese if desired.
