Equipment

  • Mixing bowl
  • Saucepan
  • Loaf pan
  • Hand mixer

Method

Preparation
  1. In a medium saucepan, combine blueberries, sugar, and lemon juice. Simmer for about 15 minutes until thickened, then cool.
  2. In a mixing bowl, beat cream cheese and sugar until smooth. Set aside.
  3. Warm milk, stir in sugar, and sprinkle yeast over it; let sit until foamy. Beat in eggs and vanilla, then mix in flour and salt, followed by softened butter. Knead until smooth.
  4. Shape dough into a ball, place in a greased bowl, and cover. Let rise until doubled in size for 1 to 1.5 hours or refrigerate overnight.
  5. After rising, punch dough down and roll out. Spread cream cheese filling and blueberry preserves, then roll and twist into a log.
  6. Cover the shaped babka and let it rise again for about 1 hour.
  7. Preheat oven to 350°F. Bake for about 40 minutes until golden brown. Test for doneness with a toothpick.
  8. Prepare sugar syrup by mixing equal parts sugar and water over low heat. Brush over warm babka after baking.
