  • 1 tablespoon Cornstarch

Step-by-Step Instructions
  1. Prepare the Tart Crust: In a bowl, combine flour, confectioners' sugar, and salt. Cut in butter until crumbly. Mix in egg yolk and cold water. Shape into a disc, wrap, and chill for 1 hour.
  2. Roll and Pre-Bake: Preheat oven to 350°F. Roll dough to a 9-inch circle and press into a tart pan. Pre-bake for 10-12 minutes until lightly golden. Cool.
  3. Make the Lemon Curd: In a saucepan, whisk lemon juice, zest, eggs, honey, and salt. Cook over medium heat until thickened, about 8-10 minutes. Strain and stir in butter.
  4. Bake the Curd Layer: Pour lemon curd into crust, spreading evenly. Bake for another 8-10 minutes until shiny and opaque. Cool completely.
  5. Prepare the Blueberry Filling: Blend blueberries until smooth, strain to extract liquid. Combine with honey and cornstarch in a saucepan, cook until thickened, about 5-7 minutes.
  6. Assemble the Tart: Pour blueberry filling over the lemon curd layer. Refrigerate for at least 2 hours until set.
