For the Cherry Layer
  • 2 cups cherries fresh or pitted frozen
  • 1/4 cup sugar adjust based on ripeness
  • 2 tablespoons lemon juice freshly squeezed
  • 1/4 cup Amaretto or substitute with almond extract
For the Mascarpone Cream
  • 1 cup heavy cream chilled
  • 1 cup mascarpone cheese higher quality yields better results
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract opt for pure for the best taste
For the Espresso Layer and Assembly
  • 24 pieces ladyfingers do not over-soak
  • 1 cup espresso or strong brewed coffee
  • 2 tablespoons cocoa powder for garnish
  • 1/4 cup shaved chocolate for decoration

Preparation Steps
  1. In a medium saucepan, combine fresh or frozen cherries, sugar, lemon juice, and Amaretto. Cook over medium heat for 5–7 minutes, stirring occasionally until the cherries soften and the mixture becomes syrupy. Set aside to cool completely.

  2. In a large mixing bowl, whip the cold heavy cream using an electric mixer until soft peaks form, about 3–4 minutes on medium speed. In another bowl, blend mascarpone cheese, powdered sugar, and vanilla extract until smooth. Gently fold the whipped cream into the mascarpone mixture.

  3. Brew a strong shot of espresso and stir in a splash of Amaretto. Pour into a shallow dish for dipping ladyfingers.

  4. Dip each ladyfinger quickly into the espresso mixture and layer them in a rectangular dish. Spread half of the mascarpone cream over the ladyfingers followed by half of the cherry mixture. Repeat the layers.

  5. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld.
