For the Chicken
  • 1 pound Chicken Breast Tenderloins Can substitute with chicken thighs
  • 1 cup Cold Water For marinating
  • 2 tablespoons Lemon Juice Concentrate Can use fresh lemon juice
  • 1 large Egg Use flax egg for vegan option
  • 1/2 cup Whole Milk Unsweetened almond milk can be used
  • 1 cup Flour Gluten-free flour blends can be used
  • 2 tablespoons Powdered Sugar and Spices Customize spices to taste
  • 2 cups Peanut or Canola Oil For frying, can substitute with vegetable oil
For the Sandwich
  • 8 slices Thinly Sliced Boiled Ham Turkey or chicken ham for lighter option
  • 1 cup Shredded Swiss Cheese Gruyère or provolone can be used
  • 4 pieces Hamburger Buns Brioche or whole wheat buns are alternatives
  • 4 tablespoons Butter Maple wood smoked if available
For the Maple Mustard Sauce
  • 1/2 cup Mayonnaise Greek yogurt can be used
  • 1/4 cup Maple Syrup Honey can be an alternative
  • 2 tablespoons Whole Grain Mustard Regular mustard can be used

Method
 

Preparation Steps
  1. In a ziplock bag, combine chicken breast tenderloins with cold water and lemon juice concentrate, then refrigerate for at least 30 minutes.
  2. In a bowl, combine mayonnaise, maple syrup, and whole grain mustard until smooth; refrigerate.
  3. In another ziplock bag, whisk together flour, powdered sugar, paprika, salt, and pepper until combined.
  4. In a bowl, whisk together the egg and whole milk until blended.
  5. Dip marinated chicken in seasoned flour, then in egg wash, and back into flour for a double coating.
  6. Heat peanut or canola oil in a frying pan over medium-high heat and fry the chicken until golden.
  7. Preheat the broiler and toast the cut sides of the hamburger buns with butter.
  8. Broil the ham and top with shredded Swiss cheese until melted.
  9. Assemble the sandwiches with fried chicken, ham, cheese, and drizzle with maple mustard sauce.
