  • 1 teaspoon Baking Powder ensure it is fresh
  • 1/4 teaspoon Salt fine sea salt recommended
  • 1/4 cup Milk can substitute with almond or oat milk
  • 1 teaspoon Vanilla Extract preferably pure
For the Filling
  • 1 cup Whipped Cream can be flavored with vanilla or chocolate
  • 1/2 cup Fruit Jam your favorite flavor, like raspberry or strawberry
  • 1 cup Mascarpone blend with sugar and vanilla for enhanced filling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a jelly roll pan by greasing it lightly with butter or baking spray and lining it with parchment paper.
  2. In a bowl, crack the eggs and beat them until foamy. Gradually add sugar and whisk until thickened.
  3. In another bowl, sift together flour, cocoa powder, baking powder, and salt. Fold this into the egg mixture gently.
  4. Stir in milk and vanilla extract until just combined.
  5. Pour batter into the prepared pan and bake for 12-15 minutes.
  6. Let it cool for 5 minutes, then roll the cake with the parchment paper.
  7. Once fully cooled, unroll the cake and spread your chosen filling evenly before rolling it back up.
  8. Dust with powdered sugar before serving.
