Preparation
- Preheat your oven to 180°C (356°F) and prepare a small baking tray by lining it with baking paper and lightly greasing the sides.
- Melt the unsalted butter over low heat in a medium saucepan, then add the soy milk, granulated sugar, and vanilla, mixing until well combined. Add 150g of chopped dark chocolate until melted and smooth.
- In a large bowl, sift together the all-purpose flour, unsweetened cocoa powder, and salt, eliminating lumps.
- Pour the melted chocolate mixture into the bowl with the dry ingredients and mix until just combined.
- Transfer the brownie batter into the prepared tray and bake for about 20 minutes, until the top is crackly and the center is soft.
- Cool the brownies completely in the tray, then prepare the ganache by melting the remaining chocolate and stirring in creamy peanut butter.
- Pour the ganache over the cooled brownies and refrigerate for at least 1 hour to set.
