Ingredients
  

Brownie Batter
  • 1 cup All-Purpose Flour Gluten-free blend can be used.
  • 1 cup Granulated Sugar Coconut sugar offers a unique flavor.
  • 1 cup Unsweetened Cocoa Powder Dutch-process cocoa for smoother taste.
  • 1 teaspoon Salt No substitutions necessary.
  • 1/2 cup Unsalted Butter Substitute with vegan butter.
  • 1 teaspoon Vanilla Extract Pure almond extract as an alternative.
  • 1 cup Soy Milk Any plant-based milk is a substitute.
  • 300 grams Dark Chocolate (Sweetened, divided) Semi-sweet or vegan chocolate works too.
Ganache
  • 200 grams Dark Chocolate (remaining) Choose sweetened or vegan variant.
  • 1/2 cup Creamy Peanut Butter Almond or sunflower butter can be used.

Method
 

Preparation
  1. Preheat your oven to 180°C (356°F) and prepare a small baking tray by lining it with baking paper and lightly greasing the sides.
  2. Melt the unsalted butter over low heat in a medium saucepan, then add the soy milk, granulated sugar, and vanilla, mixing until well combined. Add 150g of chopped dark chocolate until melted and smooth.
  3. In a large bowl, sift together the all-purpose flour, unsweetened cocoa powder, and salt, eliminating lumps.
  4. Pour the melted chocolate mixture into the bowl with the dry ingredients and mix until just combined.
  5. Transfer the brownie batter into the prepared tray and bake for about 20 minutes, until the top is crackly and the center is soft.
  6. Cool the brownies completely in the tray, then prepare the ganache by melting the remaining chocolate and stirring in creamy peanut butter.
  7. Pour the ganache over the cooled brownies and refrigerate for at least 1 hour to set.
