Baking Instructions
  1. Preheat your oven to 400°F (204°C). Grease a 9x9 inch baking dish.
  2. In a large bowl, combine the mashed sweet potatoes, melted butter, honey, buttermilk, and eggs. Mix until smooth.
  3. In a separate bowl, sift together the flour, cornmeal, baking powder, cinnamon, salt, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  7. While the cornbread is baking, prepare the cinnamon honey butter by mixing softened butter, honey, and ground cinnamon until fluffy.
  8. Let the cornbread cool slightly for about 10 minutes, then cut into squares and serve warm with the cinnamon honey butter.
