Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. Heat 1-2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing for about 2 minutes.
  3. Add the ground turkey to the skillet, breaking it up and cooking for approximately 5-6 minutes until fully cooked.
  4. Stir in the canned diced tomatoes, dried Italian herbs, salt, and black pepper, and let simmer for about 3-4 minutes.
  5. Layer half of the sliced zucchini on the bottom of the greased baking dish. Follow with half of the turkey mixture and half of the mozzarella cheese. Repeat with remaining ingredients.
  6. Bake uncovered in the preheated oven for 30-35 minutes until the cheese is bubbly and golden brown.
  7. Remove from the oven and let cool for about 5 minutes before serving.
