For the Salad
  • 1 cup Cottage Cheese can substitute with feta cheese
  • 1 cup Chickpeas canned, drained and rinsed
  • 1 cup Cherry Tomatoes diced
  • 1 medium Cucumber diced
  • 0.5 small Red Onion finely chopped
  • 1 handful Fresh Parsley finely chopped
For the Dressing
  • 1 lemon Lemon Juice freshly squeezed
  • 3 tablespoons Olive Oil extra virgin
  • to taste Salt
  • to taste Pepper
  • 0.5 teaspoon Ground Cumin optional
Optional Serving
  • 4 leaves Lettuce Leaves for wrapping

Method
 

Preparation Steps
  1. In a large mixing bowl, combine cottage cheese and chickpeas. Gently fold together until well mixed.
  2. Dice cherry tomatoes and cucumber into bite-sized pieces. Finely chop red onion and parsley. Add these to the bowl.
  3. In a separate bowl, whisk together lemon juice, olive oil, salt, pepper, and ground cumin until smooth.
  4. Pour the dressing over the salad ingredients and gently toss to coat without mashing.
  5. Taste and adjust seasoning if needed.
  6. Optionally line plates with lettuce leaves and spoon salad mixture over them. Chill for 30 minutes if desired.
  7. Garnish with chopped parsley before serving.
