Preparation Steps
- In a large mixing bowl, combine cottage cheese and chickpeas. Gently fold together until well mixed.
- Dice cherry tomatoes and cucumber into bite-sized pieces. Finely chop red onion and parsley. Add these to the bowl.
- In a separate bowl, whisk together lemon juice, olive oil, salt, pepper, and ground cumin until smooth.
- Pour the dressing over the salad ingredients and gently toss to coat without mashing.
- Taste and adjust seasoning if needed.
- Optionally line plates with lettuce leaves and spoon salad mixture over them. Chill for 30 minutes if desired.
