Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a non-stick skillet, heat olive oil over medium heat. Add diced onion and bell pepper, cooking until softened. Stir in chopped spinach and cook until wilted, then season with garlic powder, salt, and pepper.
  3. In a mixing bowl, whisk together beaten eggs, milk, and cottage cheese until smooth, adding Italian seasoning and seasoning to taste.
  4. Fold the sautéed vegetable mixture into the egg and cheese mix along with shredded cheese until well combined.
  5. Grease a 9-inch pie dish and pour the quiche mixture into it, spreading evenly.
  6. Bake in the preheated oven for 40–45 minutes until the top is golden brown and a knife inserted comes out clean.
  7. Allow to cool for 5–10 minutes before slicing and serving.
