  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. In a medium bowl, whisk the eggs until slightly frothy, approximately 1-2 minutes.
  3. Stir in the cottage cheese until thoroughly combined.
  4. Add the shredded cheddar cheese and mix well.
  5. Fold in the chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder.
  6. Mix the baking powder with a splash of water until dissolved and add it to the mixture.
  7. Drizzle in the olive oil and stir until the mixture is smooth.
  8. Spoon the mixture evenly into the greased muffin tin, filling each cup nearly to the top.
  9. Bake for 18-20 minutes until set in the middle and golden on top.
  10. Let cool for 5 minutes before running a knife around the edges and releasing the bites.
