- Preheat your oven to 350°F (175°C) and line a 10x15 inch baking sheet with parchment paper, lightly greased.
- In a blender or food processor, add 1 cup of cottage cheese and 2 large eggs, along with any optional seasoning. Blend until smooth.
- Pour the blended batter onto the prepared baking sheet and spread evenly to a thin layer, approximately 1/2 inch thick.
- Bake for 25–35 minutes, checking at 25 minutes. The flatbread should be golden brown and firm to the touch.
- Let the flatbread cool slightly on the baking sheet before cutting it into desired shapes for serving.
