Step-by-Step Instructions
  1. Start by roasting the garlic for your Creamy Chipotle Sauce. Heat a small pan over medium heat, add whole unpeeled cloves, and roast for about 5 minutes.
  2. In a blender, combine the cooled roasted garlic, chopped chipotle peppers, sour cream, mayonnaise, fresh lime juice, smoked paprika, cumin, and salt. Blend until smooth.
  3. Taste your chipotle sauce. If you desire more heat, add another chipotle pepper; if milder, stir in more sour cream.
  4. If the sauce is too thick, add a tablespoon of olive oil or a splash of water. Blend again.
  5. Transfer your finished sauce to an airtight container. Refrigerate for at least 30 minutes before using.
