Method
 

Step-by-Step Instructions
  1. Slice onions thinly and heat olive oil in a skillet. Sauté onions with a pinch of salt for 30-40 minutes until caramelized, adding beef broth as needed.
  2. Melt butter in the same skillet. Whisk in flour, then gradually add heavy cream. Fold in 2/3 of the caramelized onions, season with salt, pepper, and parsley, and stir in Parmesan cheese.
  3. Cook cavatappi pasta in salted water until al dente. Reserve pasta water, then drain.
  4. In the skillet, combine pasta with béchamel sauce, adding reserved pasta water until desired consistency is reached.
  5. Preheat oven to 350°F. Transfer pasta to a greased baking dish, top with remaining onions and breadcrumbs. Bake for 10-15 minutes until golden.
  6. Let sit before serving. Top with parsley and serve with salad or bread.
