  • 8 oz Penne Pasta Can swap for gluten-free pasta.
For the Shrimp
  • 1 lb Raw Shrimp Use raw for best flavor.
For the Sauce
  • 2 tbsp Jerk Seasoning Adjust heat level to preference.
  • 2 tbsp Butter or Oil For sautéing.
  • 1 medium Onion Chopped.
  • 2 cloves Garlic Minced.
  • 2 medium Bell Peppers Any variety, sliced.
  • 1 cup Heavy Cream Use coconut milk for dairy-free.
  • 1/2 cup Chicken Broth Can use vegetable broth.
  • 1/2 cup Parmesan Cheese Substitute with dairy-free cheese if needed.
For the Garnish
  • 2 tbsp Scallions Sliced.
  • 1 tbsp Lime Juice
  • 2 tbsp Fresh Parsley Optional.

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Cook the penne pasta until al dente, about 8-10 minutes. Drain and reserve ½ cup of the pasta water.
  2. In a skillet, heat butter or oil over medium-high heat. Toss shrimp with jerk seasoning and sauté for about 2 minutes per side until pink and opaque. Set aside.
  3. Add butter to the skillet, lower heat, and sauté onions and garlic for 1-2 minutes. Add bell peppers and cook for another 3-4 minutes.
  4. Pour in heavy cream and chicken broth. Bring to a simmer, then stir in Parmesan cheese until melted and sauce thickens. Adjust seasoning as needed.
  5. Add cooked pasta to the skillet and toss to coat. If too thick, add reserved pasta water to reach desired consistency. Mix in shrimp, scallions, and lime juice.
  6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
