Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) while cooking the shells in a large pot until al dente, about 10–12 minutes. Drain and cool.
  2. In a skillet, add olive oil and sauté minced garlic for 1 minute. Add spinach, stirring until wilted for 2–3 minutes. Season with salt and pepper. Cool.
  3. Combine sautéed spinach and garlic with ricotta, mozzarella, Parmesan, and egg in a bowl. Mix until smooth, adding nutmeg if desired.
  4. Spread a layer of marinara sauce at the bottom of a 9x13-inch baking dish.
  5. Stuff each shell with the cheese mixture and arrange in the dish, then pour more marinara sauce over the top.
  6. Cover with foil and bake for 25 minutes. Remove foil, sprinkle additional mozzarella, and bake uncovered for another 10 minutes.
  7. Let shells rest for 5 minutes before serving. Garnish with fresh herbs if desired.
