- Preheat your oven to 375°F (190°C) while cooking the shells in a large pot until al dente, about 10–12 minutes. Drain and cool.
- In a skillet, add olive oil and sauté minced garlic for 1 minute. Add spinach, stirring until wilted for 2–3 minutes. Season with salt and pepper. Cool.
- Combine sautéed spinach and garlic with ricotta, mozzarella, Parmesan, and egg in a bowl. Mix until smooth, adding nutmeg if desired.
- Spread a layer of marinara sauce at the bottom of a 9x13-inch baking dish.
- Stuff each shell with the cheese mixture and arrange in the dish, then pour more marinara sauce over the top.
- Cover with foil and bake for 25 minutes. Remove foil, sprinkle additional mozzarella, and bake uncovered for another 10 minutes.
- Let shells rest for 5 minutes before serving. Garnish with fresh herbs if desired.
