Ingredients
  

For the Salad
  • 3 cups broccoli fresh and crisp
  • 4 strips bacon optional, chop into pieces
  • 1/2 medium red onion finely diced
  • 1 cup red cabbage thin strips, optional
  • 1 medium carrot shredded
For the Dressing
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1/3 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 clove garlic minced, optional
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Wash and dry the broccoli, cutting it into small florets.
  2. Chop bacon, dice red onion, and shred the carrot. Slice red cabbage if using.
  3. Place all prepared vegetables and bacon in a large mixing bowl.
Making the Dressing
  1. Combine mustard, honey, olive oil, vinegar, garlic, salt, and pepper in a small bowl.
  2. Whisk until fully emulsified, about 1-2 minutes.
Combining Salad and Dressing
  1. Pour dressing over the salad in the mixing bowl. Toss gently until well-coated.
Chilling
  1. Cover the salad with plastic wrap and refrigerate for at least one hour.
Serving
  1. Toss the salad again before serving. Enjoy as a side dish or light lunch.
