  • 1 cup breadcrumbs gluten-free if needed
  • 1 large egg or use flax egg for vegan
For Flavoring
  • 2 tbsp soy sauce low-sodium preferred
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika or regular paprika
  • to taste salt

Step-by-Step Instructions
  1. Grate the zucchini and carrot, then squeeze out excess moisture. Place into a mixing bowl.
  2. Combine cooked quinoa, prepped zucchini, grated carrot, and lightly mashed chickpeas. Stir well.
  3. Fold in breadcrumbs, egg, and soy sauce. Season with garlic powder, onion powder, cumin, and paprika.
  4. Shape the mixture into 2-3 inch patties and arrange them on a plate.
  5. Heat olive oil in a skillet over medium heat. Cook patties for 4-5 minutes on each side until golden brown.
  6. Transfer cooked patties to paper towels to absorb excess oil and serve warm.
