Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together all-purpose flour, corn starch, salt, and black pepper until well combined.
  2. Pat the chicken wings dry with paper towels, toss them in the dredge mixture, then let them rest for 30 minutes.
  3. In a skillet, melt the unsalted butter, then add the shallot and minced garlic. Cook until fragrant, then pour in fish sauce, sugar, and water.
  4. Heat oil in a large pot to 350°F and fry wings in small batches for 6-8 minutes or until golden brown.
  5. Remove wings with a slotted spoon and transfer to a wire rack set over a baking sheet.
  6. Toss the fried wings with the prepared glaze in a large mixing bowl, squeezing fresh lime juice over the top.
  7. Transfer to a serving platter, garnish, and serve with lime wedges.
