  1. Trim any excess fat from the boneless skinless chicken thighs, then cut them into bite-sized pieces. Place the chicken evenly at the bottom of the crock pot.
  2. In a mixing bowl, whisk together the light brown sugar, soy sauce, bourbon, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic until smooth.
