- Season the chicken breasts with salt, black pepper, and Cajun seasoning, then place them in the bottom of the slow cooker.
- Melt the butter in a skillet over medium heat, add the chopped onion, and sauté for 3-4 minutes until soft. Stir in minced garlic and cook for an additional minute, then remove from heat.
- Pour the sautéed onion and garlic mixture over the chicken. Sprinkle with smoked paprika and dried oregano, then pour in the chicken broth.
- Cover the slow cooker and cook on low for 6 hours or on high for 3-4 hours.
- After cooking, shred the chicken in the pot with two forks, mixing it with the sauce.
- Stir in the heavy cream and allow to heat through on low for 15-20 minutes.
- Serve the dish over rice, pasta, or mashed potatoes, and garnish with chopped parsley.
