- Step 1: Place a layer of boneless, skinless chicken breasts at the bottom of your crockpot.
- Step 2: In a medium bowl, whisk together the reserved pineapple juice, low-sodium soy sauce, honey, minced garlic, and grated fresh ginger. Pour this mixture evenly over the chicken layers in the crockpot.
- Step 3: Add chopped red and green bell peppers and pineapple chunks to the crockpot. Stir gently to combine all the ingredients.
- Step 4: Cover the crockpot and set it to cook on low for 5-6 hours or on high for 2-3 hours.
- Step 5: In the last 30 minutes, whisk together cornstarch and water to create a smooth slurry and stir it into the crockpot.
- Step 6: Serve over steamed jasmine rice or noodles, garnished with chopped green onions and sesame seeds.
