- Wash all your produce thoroughly. Peel cucumbers if desired, then slice thinly. Slice apples into thin wedges, discarding the core. Chop celery into small pieces and set aside in a large mixing bowl.
- In the same bowl, combine sliced cucumbers, apples, and celery. Add nuts if using. Toss gently to mix without bruising.
- In a separate bowl, whisk together yogurt, optional mayonnaise, honey or maple syrup, apple cider vinegar (or lemon juice), and Dijon mustard until smooth.
- Drizzle the dressing over the salad mixture. Toss gently to coat.
- Garnish with chopped herbs. Cover and refrigerate for 20 minutes.
- Before serving, gently toss again. Spoon into serving dishes and enjoy.
