  • 2 medium English cucumbers or pickling cucumbers
  • 2 medium sweet apples such as Fuji
  • 1 cup chopped celery optional
  • 1/2 cup mixed nuts like walnuts, pecans, or almonds
  • 1/4 cup fresh herbs such as parsley or cilantro
For the Dressing
  • 1 cup plain yogurt or plant-based yogurt for vegan
  • 3 tablespoons mayonnaise optional
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons apple cider vinegar or lemon juice
  • 1 teaspoon Dijon mustard

Method
 

Preparation
  1. Wash all your produce thoroughly. Peel cucumbers if desired, then slice thinly. Slice apples into thin wedges, discarding the core. Chop celery into small pieces and set aside in a large mixing bowl.
  2. In the same bowl, combine sliced cucumbers, apples, and celery. Add nuts if using. Toss gently to mix without bruising.
  3. In a separate bowl, whisk together yogurt, optional mayonnaise, honey or maple syrup, apple cider vinegar (or lemon juice), and Dijon mustard until smooth.
  4. Drizzle the dressing over the salad mixture. Toss gently to coat.
  5. Garnish with chopped herbs. Cover and refrigerate for 20 minutes.
  6. Before serving, gently toss again. Spoon into serving dishes and enjoy.
