  • 2 medium English cucumbers sliced
  • 2 pieces Granny Smith apples sliced
  • 1 stalk celery sliced
  • 0.5 cup chopped walnuts
  • 0.25 cup fresh herbs (parsley or cilantro) chopped
For the Dressing
  • 0.5 cup yogurt or plant-based yogurt
  • 2 tablespoons mayonnaise optional
  • 1-2 tablespoons honey or maple syrup to taste
  • 2 tablespoons apple cider vinegar or lemon juice
  • 1 teaspoon Dijon mustard optional

Method
 

Preparation Steps
  1. Wash 2 medium English cucumbers and 2 Granny Smith apples under cool running water. Slice them into bite-sized pieces.
  2. Slice 1 stalk of celery into thin pieces and, if desired, chop a small red onion finely. Add to the mixing bowl.
  3. In a separate bowl, whisk together 0.5 cup of yogurt, 2 tablespoons of mayonnaise, 1 to 2 tablespoons of honey or maple syrup, 2 tablespoons of apple cider vinegar or lemon juice, and 1 teaspoon of Dijon mustard. Season with salt and pepper.
  4. Pour the dressing over the salad mixture and gently toss until well coated.
  5. Mix in 0.25 cup of chopped fresh herbs, cover the bowl, and refrigerate for 20 minutes.
  6. Serve the salad in a bowl or on individual plates and enjoy!
