Preparation Steps
- Wash 2 medium English cucumbers and 2 Granny Smith apples under cool running water. Slice them into bite-sized pieces.
- Slice 1 stalk of celery into thin pieces and, if desired, chop a small red onion finely. Add to the mixing bowl.
- In a separate bowl, whisk together 0.5 cup of yogurt, 2 tablespoons of mayonnaise, 1 to 2 tablespoons of honey or maple syrup, 2 tablespoons of apple cider vinegar or lemon juice, and 1 teaspoon of Dijon mustard. Season with salt and pepper.
- Pour the dressing over the salad mixture and gently toss until well coated.
- Mix in 0.25 cup of chopped fresh herbs, cover the bowl, and refrigerate for 20 minutes.
- Serve the salad in a bowl or on individual plates and enjoy!
