  1. Begin by shredding your cooked chicken into bite-sized pieces. Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion. Place all ingredients in a large mixing bowl.
  2. In the mixing bowl, drizzle in the ranch dressing and gently fold the mixture together. Season with salt and pepper to taste.
  3. Warm your whole wheat tortillas in the microwave for about 10-15 seconds or on a skillet until pliable.
  4. Lay a warm tortilla flat, spread shredded lettuce across the center, and spoon the chicken and veggie mixture on top. Sprinkle with shredded cheese.
  5. Fold in the sides of the tortilla and roll tightly from the bottom up. Slice in half if desired.
