Step-by-Step Instructions
  1. In a small bowl, combine 8 ounces of cream cheese, 1 finely minced spring onion, 2 tablespoons of chopped fresh chives, 1 tablespoon of lemon juice, and the zest of 1 lemon. Mix until smooth and creamy.
  2. Slice 1 cucumber into 1/2-inch thick rounds and pat each slice dry with a paper towel to remove excess moisture. Arrange cucumber slices on a serving platter.
  3. Spread about 1 teaspoon of the cream cheese mixture over each cucumber slice. Top with a piece of smoked salmon.
  4. Finish each bite with a sprinkle of freshly cracked black pepper and additional chopped chives. Serve cold.
