Step‑by‑Step Instructions
  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk caster sugar and room temperature eggs until pale and fluffy, about 5–7 minutes.
  3. Sift the all-purpose flour, cocoa powder, and baking powder into the egg mixture and fold gently.
  4. Pour the batter into the prepared loaf pan and bake for 45–50 minutes.
  5. Cool in the pan for 10 minutes, then prepare chocolate ganache by heating double cream and mixing with chopped dark chocolate.
  6. Slice the cooled cake horizontally into two layers, layering with ganache and cream.
  7. Spread remaining ganache on top and add whipped cream.
  8. Garnish with reduced cherry juice and place cherries on top.
  9. Chill before serving.
