Step-by-Step Instructions
  1. In a medium bowl, blend cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  2. Preheat your oven to 400°F (200°C).
  3. On a floured surface, roll out puff pastry into a 10.5-inch square, about ⅛ inch thick.
  4. Cut the rolled pastry into 9 equal squares, each about 3.5 inches. Place a dollop of cream cheese filling and 4 raspberries in the center of each square.
  5. Brush one corner of each pastry with egg wash, then fold the opposite corner over to seal.
  6. Place the pastries on a parchment-lined baking sheet and freeze for at least 30 minutes.
