Ingredients
  

For the Shrimp
  • 1 lb Large Shrimp Peeled and deveined
  • 2 tbsp Olive Oil Extra virgin recommended
  • 1 tbsp Paprika Smoked paprika for extra kick
  • 1 tsp Garlic Powder Or use fresh minced garlic
  • 1 tbsp Salt
  • 1 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper Optional for heat
For the Corn Salsa
  • 1 cup Frozen Corn Can substitute with fresh or canned
  • 1/2 cup Diced Red Onion
  • 1 whole Jalapeño Optional, can substitute with bell pepper
  • 1/4 cup Chopped Cilantro Or parsley as alternative
  • 2 tbsp Lime Juice Lemon juice can be substituted
For the Creamy Garlic Sauce
  • 1/2 cup Mayonnaise Greek yogurt can be used
  • 1/4 cup Sour Cream Buttermilk can be used
  • 1 clove Minced Garlic Use less than garlic powder
For Garnish
  • 1 tbsp Sesame Seeds Toasted for enhanced aroma
  • 2 tbsp Chopped Green Onions Scallions can be used

Method
 

Instructions
  1. Prepare shrimp marinade by mixing shrimp with olive oil, paprika, garlic powder, salt, black pepper, and optional cayenne. Marinade for 15 minutes.
  2. Mix corn salsa ingredients in a bowl: corn, onion, optional jalapeño, cilantro, lime juice, and salt. Let sit for 5 minutes.
  3. Preheat the grill to medium heat (about 350°F). Grill shrimp for 2-3 minutes on each side until opaque and charred.
  4. Make creamy garlic sauce by whisking together mayonnaise, sour cream, minced garlic, lime juice, salt, and pepper until smooth.
  5. Assemble bowls with corn salsa, grilled shrimp, avocado, garlic sauce, sesame seeds, and green onions.
