Method
 

Step‑by‑Step Instructions
  1. Slice the flank steak against the grain into 1/4 inch thick strips. Mix with soy sauce, peanut oil, cornstarch, and baking soda. Marinate for 10 minutes.
  2. In a medium bowl, combine stock, Shaoxing wine, dark soy sauce, brown sugar, and cornstarch. Stir well to mix.
  3. Bring water to a boil in a skillet. Add broccoli and steam for 1 minute until tender. Remove and keep warm.
  4. Heat peanut oil in the skillet. Cook the marinated beef until browned, then add garlic and ginger.
  5. Add the steamed broccoli back into the skillet with beef. Stir the sauce mixture and pour over the beef and broccoli. Cook for 1 minute until thickened.
  6. Serve hot over rice.
