Ingredients
  

For the Salad
  • 1 lb Boneless, Skinless Chicken Breast Cooked and shredded
  • Salt and Black Pepper To taste
  • 1 can Black Beans Drained and rinsed
  • 1 cup Red Bell Pepper Finely diced
  • 1 cup Fire-Roasted Corn Fresh or canned
  • 1/2 cup Red Onion Finely diced
  • 1/4 cup Cilantro Chopped, optional
For the Dressing
  • 1 cup Full-Fat Plain Greek Yogurt Or Skyr
  • 2 Tbsp Lime Juice Freshly squeezed
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder
  • 1 tsp Smoked Paprika

Method
 

Cooking Steps
  1. Bring a medium pot of water to a rolling boil. Season chicken with salt and pepper, add to boiling water, and boil for 15-20 minutes until internal temperature reaches 165°F.
  2. Once cooked, drain and let cool slightly. Shred chicken into bite-sized pieces.
  3. In a large bowl, whisk together Greek yogurt and lime juice until smooth. Add cumin, chili powder, and smoked paprika, mixing well.
  4. Fold in shredded chicken until coated. Add black beans, red bell pepper, corn, and red onion.
  5. Mix all ingredients until evenly combined. Refrigerate for at least 30 minutes.
  6. Serve chilled on whole wheat bread, wrapped, or with tortilla chips.
