Cooking Steps
  1. Heat a large skillet over medium heat and add your ground beef. Cook for about 5-7 minutes, breaking it apart with a spatula until browned, and drain any excess fat. Stir in taco seasoning and a splash of water, simmering for an additional 5 minutes until the mixture is well combined and fragrant.
  2. In a small saucepan, warm the refried beans over low heat, adding a bit of water to achieve a smooth, spreadable consistency. Stir constantly for about 3-4 minutes until heated through.
  3. For crispy tortillas, heat oil in a skillet over medium heat and fry each tortilla for 1-2 minutes on each side until golden brown or brush tortillas lightly with oil and bake them at 400°F (200°C) for 5-7 minutes until crisp.
  4. On a baking sheet, place one crispy tortilla as the base. Spread a layer of warm refried beans on top, followed by a scoop of seasoned ground beef. Finish with another crispy tortilla on top.
  5. Spread taco sauce over the top tortilla, allowing it to flow slightly over the edges. Sprinkle shredded Mexican blend cheese atop the sauce.
  6. Preheat your oven to 400°F (200°C) and bake the Mexican Pizza for 8-10 minutes, or until the cheese is melted and bubbly.
  7. Once baked, let it cool for a minute and slice into quarters. Serve hot with your favorite toppings.
