Ingredients

  • 2 cups Cherry Tomatoes Ripe and sweet for best flavor
  • 2 tbsp Olive Oil Can substitute with avocado oil
  • 3 cloves Garlic Roughly chopped; can use garlic powder
  • 2 tbsp Dried Basil Fresh basil may be substituted
  • 2 tbsp Dried Oregano Fresh oregano can work, adjust as needed
For the Toasts
  • 1 tin Sardines Can substitute with anchovies
  • 4 small toasts Sourdough or Baguette For crunchy foundation
  • 2 tbsp Butter May use vegan butter for dairy-free
For the Finishing Touch
  • 1 tsp Red Pepper Flakes Adjust according to spice preference
  • 1 tbsp Hot Honey Optional; maple syrup can be used

Method
 

Step‑by‑Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pan over medium heat. Add 2 cups of halved cherry tomatoes and cover. Cook for about 10 minutes until blistered and fragrant.
  2. Stir in 3 cloves of roughly chopped garlic, 2 tablespoons of dried basil, 1 teaspoon of red pepper flakes, and 2 tablespoons of dried oregano. Sauté for another 10 minutes until fragrant.
  3. Transfer the sautéed tomato mixture to a food processor and blend until smooth. Set aside to cool slightly.
  4. In a skillet, melt 2 tablespoons of butter on medium heat. Add 4 small toasts and toast on both sides for 2-3 minutes until golden and crispy.
  5. Spread about 1 tablespoon of the tomato mixture onto each slice of toasted bread. Place one sardine on each toast and gently mash them into the spread.
  6. Sprinkle red pepper flakes over the top and drizzle with hot honey if desired. Serve immediately.
