Step‑by‑Step Instructions for Vegetarian Pineapple Fried Rice
  1. Cook your rice according to package instructions; cool in the refrigerator if using fresh.
  2. Heat 1 tablespoon of oil in a skillet over medium-high heat. Add diced bell peppers, carrots, and snap peas. Stir-fry for 5-7 minutes.
  3. Add pineapple chunks and optional tofu to the skillet and cook for 3-4 minutes.
  4. Add the cooled rice to the skillet, breaking up any clumps. Cook for 3-5 minutes.
  5. Drizzle soy sauce and sesame oil over the rice mixture, stirring well and cooking for an additional 2-3 minutes.
