Method
 

Step-by-Step Instructions for Veggie White Lasagna
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté chopped onions until translucent (3-4 minutes).
  3. Add mushrooms and zucchini; cook for 5-7 minutes until softened.
  4. Stir in spinach, basil, and oregano; cook until spinach wilts (2-3 minutes).
  5. In a bowl, mix ricotta, salt, pepper, and half of the parmesan until smooth.
  6. Spread marinara sauce at the bottom of a baking dish. Layer with noodles, ricotta mixture, sautéed veggies, mozzarella, and more sauce.
  7. Cover with foil and bake for 30 minutes. Remove foil, add remaining mozzarella, and bake uncovered for 15-20 minutes.
  8. Let rest for 10-15 minutes before serving.
