Cooking Steps
- Preheat your oven to 400°F (200°C).
- Trim the tough ends of the lemongrass and finely chop the tender white parts.
- Mince the garlic and shallot.
- In a mixing bowl, combine the chopped lemongrass, minced garlic, shallot, fish sauce, soy sauce, honey, sesame oil, black pepper, and red pepper flakes.
- Cut the chicken thighs into bite-sized pieces and add to the marinade. Allow to marinate for at least 30 minutes.
- Heat vegetable oil in a skillet over medium-high heat.
- Sear the marinated chicken in batches for 2-3 minutes until golden brown.
- Transfer the seared chicken to a baking dish.
- Bake the chicken in the preheated oven for 20-25 minutes until it reaches an internal temperature of 165°F (74°C).
- Let the chicken rest for a few minutes before serving hot with garnishes.
