Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. Trim the tough ends of the lemongrass and finely chop the tender white parts.
  3. Mince the garlic and shallot.
  4. In a mixing bowl, combine the chopped lemongrass, minced garlic, shallot, fish sauce, soy sauce, honey, sesame oil, black pepper, and red pepper flakes.
  5. Cut the chicken thighs into bite-sized pieces and add to the marinade. Allow to marinate for at least 30 minutes.
  6. Heat vegetable oil in a skillet over medium-high heat.
  7. Sear the marinated chicken in batches for 2-3 minutes until golden brown.
  8. Transfer the seared chicken to a baking dish.
  9. Bake the chicken in the preheated oven for 20-25 minutes until it reaches an internal temperature of 165°F (74°C).
  10. Let the chicken rest for a few minutes before serving hot with garnishes.
