  • 5-6 medium apples preferably Honeycrisp or a mix of sweet and tart varieties
  • 1/4 cup maple syrup can substitute with agave syrup or honey
  • 1 teaspoon cinnamon or pumpkin pie spice for a seasonal twist
  • 1/4 teaspoon nutmeg optional
For the Crisp Topping
  • 1 cup oats certified gluten-free if needed
  • 1/2 cup almond flour can substitute with all-purpose flour
  • 1/2 cup walnuts or pecans, chopped
  • 1/2 cup pecans or walnuts, chopped
  • 1/4 cup vegan butter can substitute with melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Peel and thinly slice the apples. In a 9" pie dish, combine the sliced apples with maple syrup, cinnamon, and nutmeg.
  2. In a mixing bowl, combine oats, almond flour, chopped walnuts, chopped pecans, maple syrup, melted vegan butter, vanilla extract, cinnamon, nutmeg, and salt. Mix until just combined.
  3. Spread the oat topping evenly over the apples in the pie dish. Cover loosely with foil and bake for 30 minutes. Remove foil and bake for an additional 25 minutes.
  4. Let the Healthy Apple Crisp cool for about 10 minutes before serving.
