  4. Pour in maple syrup, melted coconut oil, and vanilla extract, and stir until a dough forms.
  5. Scoop and roll dough into balls, placing them on the baking sheet.
  6. Flatten each ball slightly and optionally press pistachios on top.
  7. Bake for 10-12 minutes until edges are golden brown.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
