Step-by-Step Instructions for Dragon Fruit Lemonade
  1. In a small saucepan, combine 1 cup of water and 1 cup of sugar over medium heat. Stir continuously until the sugar fully dissolves and the mixture becomes clear, about 5 minutes. Once dissolved, remove the saucepan from the heat and allow the simple syrup to cool at room temperature, which will take approximately 15-20 minutes.
  2. While the simple syrup is cooling, slice about 4-6 fresh lemons in half and remove any seeds carefully. Use a citrus juicer to extract the juice into a measuring cup until you reach around 1 cup.
  3. Take 1-2 fresh dragon fruits and peel them carefully, keeping some pink flesh for a beautiful color. Cut the fruit into smaller pieces and place them in a blender with 1 tablespoon of water. Blend on low for 1-3 light pulses until it reaches a smooth yet slightly textured puree.
  4. In a blender, combine the pureed dragon fruit, the freshly squeezed lemon juice, and the cooled simple syrup. Add 2 cups of cold water to the mixture. Blend briefly until everything is just mixed together.
  5. Once blended, take a moment to taste your dragon fruit lemonade. Adjust components as needed to achieve the perfect balance.
  6. Fill tall glasses with ice, then pour the dragon fruit lemonade over the ice. Garnish with slices of fresh dragon fruit, lemon wheels, and a sprig of fresh mint. Serve immediately.
