Method
 

Cooking Instructions
  1. Heat a large skillet over medium heat. Cook ground beef for 5-7 minutes until browned. Drain excess fat, add taco seasoning and 1/4 cup of water, and simmer for 5 minutes.
  2. In a separate skillet, heat 1/2 inch of oil over medium-high heat. Fry corn tortillas for about 20 seconds each side until golden and crispy.
  3. Return crispy tortillas to the skillet. Fill each with ground beef mixture, Rotel tomatoes, diced onions, and shredded cheese. Cover for 1-2 minutes until cheese melts.
  4. Transfer tacos to a serving plate, garnish with cilantro, and serve with lime wedges.
