Ingredients
  

For the Steak Marinade
  • 1 lb Flank Steak or skirt steak or sirloin
  • 1/4 cup Fresh Lime Juice or lemon juice
  • 2 tbsp Olive Oil or avocado oil
  • 1/4 cup Fresh Cilantro or parsley
  • 2 cloves Garlic minced
  • 1 tsp Ground Cumin or coriander
  • 1 tsp Chili Powder or paprika
  • to taste Salt
  • to taste Black Pepper
For the Bowl Assembly
  • 2 cups Cooked Rice white, brown, quinoa, or cauliflower rice
  • 1 can Black Beans or kidney beans
  • 1 cup Corn fresh, frozen, or canned
  • 1 cup Cherry Tomatoes halved
  • 1 large Avocado diced
  • 1/2 medium Red Onion thinly sliced
  • 1/2 cup Feta Cheese optional
  • to taste Extra Cilantro for garnish
  • to taste Lime Wedges for garnish

Method
 

Marinade Preparation
  1. In a bowl, whisk together fresh lime juice, olive oil, chopped cilantro, minced garlic, ground cumin, chili powder, salt, and pepper until well combined. Coat the flank steak evenly in this marinade. Cover and refrigerate for at least 30 minutes.
Cooking Instructions
  1. Cook rice according to package instructions for 15-20 minutes until fluffy. Heat black beans in a pot, seasoning as desired. If using corn, heat it as well.
  2. Preheat grill or cast-iron pan over medium-high heat. Grill steak for 4-5 minutes per side until medium-rare (130°F). Let rest for 5-10 minutes before slicing.
  3. Assemble bowls by layering cooked rice, black beans, corn, cherry tomatoes, avocado, and red onion. Top with sliced steak, feta cheese if using, cilantro, and lime wedges.
