  • 1 tablespoon Additional Lime Juice
  • 1/4 teaspoon Salt For seasoning.

Preparation
  1. Prepare the Salsa: Dice mango, tomatoes, red onion, and cucumber. Combine with cilantro, lime juice, and salt. Let sit for 10-15 minutes.
  2. Marinate the Shrimp: Whisk olive oil, lime juice, chili powder, garlic powder, and salt in a bowl. Add shrimp and coat. Cover and refrigerate for 15 minutes.
  3. Cook the Shrimp: Heat skillet over medium-high heat. Cook shrimp for about 2 minutes on each side until opaque and charred.
  4. Make the Lime-Chili Sauce: Mix mayo or yogurt, additional lime juice, chili powder, and salt until smooth. Adjust consistency with water if needed.
  5. Assemble the Bowls: Layer rice at the bottom, add avocados, mango salsa, cooked shrimp, and drizzle with lime-chili sauce.
