  • 1 tsp Vanilla Extract Pure vanilla preferred

  • 85 g Chocolate Chips Optional mix-ins like nuts can be added

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 160°C (320°F) for fan ovens or 170°C (338°F) for conventional ovens.
  2. Melt the chopped dark chocolate and butter in a heatproof bowl over simmering water.
  3. Beat together the eggs, caster sugar, and demerara sugar until pale, thick, and fluffy.
  4. Sift together the plain flour, cocoa powder, baking powder, and salt, then fold in the chocolate chips.
  5. Fold the melted chocolate mixture into the egg-sugar foam gradually.
  6. Gently incorporate the dry ingredient mixture into the wet mixture until just combined.
  7. Scoop tablespoonfuls of dough onto a prepared baking tray, spacing them apart.
  8. Bake for 12 to 14 minutes until tops are crackly and edges are set.
  9. Remove from oven and cool on the tray for about 10 minutes before transferring.
