Preparation Steps
  1. In a medium bowl, mix together 4 tablespoons of softened unsalted butter, 2 minced garlic cloves, 1 teaspoon of dried Italian herbs, and a pinch of red pepper flakes (if using). Stir until well combined.
  2. Preheat your grill or grill pan to medium-high heat (375°F). Brush the chicken breasts with olive oil and season with salt and black pepper. Grill for 5-6 minutes per side until cooked through.
  3. While the chicken rests, heat a skillet over medium heat. Spread garlic butter on one side of each slice of bread and toast for 2-3 minutes per side until golden brown.
  4. Spread mayonnaise on the unbuttered side of the toasted bread. Layer lettuce, tomato slices, and grilled chicken on one slice, top with another slice of bread.
  5. Press down on the sandwich, slice it diagonally, and serve immediately with kettle-cooked chips or a light salad.
