  1. Begin by cutting your sirloin steak or ribeye into 1-inch cubes, ensuring even cooking. Pat the steak pieces dry with paper towels, then season generously with salt and black pepper. Let the seasoned steak bites sit at room temperature for about 15 minutes.
  2. In a large cast-iron skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers but doesn’t smoke, approximately 2 minutes. Swirl the oil to coat the skillet evenly before proceeding.
  3. Carefully add the steak cubes to the skillet in a single layer, ensuring they aren’t overcrowded. Sear for 2-3 minutes without moving them until they develop a beautiful golden-brown crust. Flip the steak bites and sear the other side for an additional 2-3 minutes. Once browned and cooked to medium-rare, transfer the steak bites to a plate and cover to keep warm.
