  • 2 pieces Flour Tortillas whole wheat or gluten-free versions can be used
  • 1 cup Shredded Mozzarella or Provolone Cheese cheddar is a great alternative for sharper flavor
  • 1/2 cup Crumbled Feta Cheese goat cheese can be used as a twist
  • 1 cup Zucchini yellow squash can be substituted or omitted
  • 1 piece Red Bell Pepper other bell pepper varieties work well too
  • 1/2 piece Red Onion white onion can be used for milder flavor
  • 2 tablespoons Olive Oil avocado oil is a solid alternative
  • 1/2 cup Sun-Dried Tomatoes fresh tomatoes can be used if necessary
  • 1/4 cup Kalamata Olives other kinds of olives can be used to taste
  • 1 teaspoon Dried Oregano Italian seasoning can be substituted

  • 1 cup Optional Greens (Fresh Spinach or Arugula) can be omitted if no greens are preferred

Method
 

Step‑by‑Step Instructions
  1. Preheat a large skillet or grill pan over medium heat for about 3 minutes.
  2. In a mixing bowl, combine sliced zucchini, red bell pepper, and red onion. Drizzle with olive oil and season with salt, pepper, and dried oregano. Sauté in the hot skillet for 3-4 minutes until tender.
  3. Place one flour tortilla in the skillet. Sprinkle half of the shredded mozzarella evenly over the tortilla.
  4. Layer the sautéed vegetables over the mozzarella, followed by sun-dried tomatoes, kalamata olives, and crumbled feta cheese. Add optional greens if using.
  5. Top with the remaining mozzarella and carefully place a second tortilla on top. Press down gently with a spatula.
  6. Cook for 2-3 minutes on one side until golden brown. Flip carefully and cook for another 2-3 minutes until cheese is melted.
  7. Remove from skillet, let rest for a minute, then slice into wedges.
