- Preheat a large skillet or grill pan over medium heat for about 3 minutes.
- In a mixing bowl, combine sliced zucchini, red bell pepper, and red onion. Drizzle with olive oil and season with salt, pepper, and dried oregano. Sauté in the hot skillet for 3-4 minutes until tender.
- Place one flour tortilla in the skillet. Sprinkle half of the shredded mozzarella evenly over the tortilla.
- Layer the sautéed vegetables over the mozzarella, followed by sun-dried tomatoes, kalamata olives, and crumbled feta cheese. Add optional greens if using.
- Top with the remaining mozzarella and carefully place a second tortilla on top. Press down gently with a spatula.
- Cook for 2-3 minutes on one side until golden brown. Flip carefully and cook for another 2-3 minutes until cheese is melted.
