- Clean the fresh squid by removing the head and tentacles, peeling off the outer skin, and rinsing under cold water.
- Mix 2 tbsp of olive oil, 1 tsp of coriander, 2 tsp of oregano, paprika, salt, and pepper, and add fresh lemon juice to make the marinade.
- Marinate the squid in the mixture for 15 minutes at room temperature.
- Preheat the grill to high heat, around 400°F (200°C). Test the heat properly.
- Grill squid for 3 to 4 minutes on each side until slightly charred and firm.
- Prepare a dressing of 2 tbsp olive oil and 1 tbsp lemon juice while the squid is grilling.
- Once grilled, rest squid for a minute, sprinkle with dried oregano, and serve with lemon quarters.
