For the Marinade
  • 1 kg Fresh squid Calamari can be used as a substitute.
  • 2 tablespoons Extra Virgin Olive Oil Light olive oil can be used for a milder taste.
  • 1 teaspoon Ground coriander Cumin can be substituted.
  • 2 teaspoons Dried oregano Fresh oregano may also be used.
  • 1 teaspoon Paprika Smoked paprika can add extra flavor.
  • to taste Salt and Pepper Adjust to suit your taste.
  • 3 tablespoons Fresh lemon juice Lime juice can be used as a substitute.
For Serving
  • to taste Dried oregano Optional for topping.
  • 1 Lemon quarters For squeezing over the squid.

Method
 

Step-by-Step Instructions
  1. Clean the fresh squid by removing the head and tentacles, peeling off the outer skin, and rinsing under cold water.
  2. Mix 2 tbsp of olive oil, 1 tsp of coriander, 2 tsp of oregano, paprika, salt, and pepper, and add fresh lemon juice to make the marinade.
  3. Marinate the squid in the mixture for 15 minutes at room temperature.
  4. Preheat the grill to high heat, around 400°F (200°C). Test the heat properly.
  5. Grill squid for 3 to 4 minutes on each side until slightly charred and firm.
  6. Prepare a dressing of 2 tbsp olive oil and 1 tbsp lemon juice while the squid is grilling.
  7. Once grilled, rest squid for a minute, sprinkle with dried oregano, and serve with lemon quarters.
